Sausage and Tortellini Soup

Ingredients

2 Brandt Smoked Farmer Sausage, sliced
1 tablespoon olive oil
1 medium onion, 1/2 inch minced
4 cloves garlic, minced
2 cups chicken broth
1 can diced tomatoes
1 tablespoon tomato paste
1 cup heavy cream
1 package O’Sole Mio Four Cheese Tortellini
1 bunch kale, stemmed, washed and chopped
½ cup parmesan cheese – optional
Crushed chili flakes

Directions

  1. Heat a large pot over medium-high heat. Add the oil, Brandt Smoked Farmer Sausage, onions, and garlic and cook until the sausage is browned and the onion is translucent, about 5 minutes.
  2. Add the chicken stock, diced tomatoes, and tomato paste until fully incorporated. Bring to a boil, then reduce heat to a simmer and cook until slightly reduced, about 15 minutes. Stir in O’Sole Mio tortellini and kale, simmer for 3-5 minutes until pasta is tender. Remove from heat and stir in cream.
  3. Ladle the soup into bowls. Sprinkle with parmesan and red pepper flakes, if desired, season with salt and pepper to taste.
