Ingredients
2 Brandt Smoked Farmer Sausage, sliced
1 tablespoon olive oil
1 medium onion, 1/2 inch minced
4 cloves garlic, minced
2 cups chicken broth
1 can diced tomatoes
1 tablespoon tomato paste
1 cup heavy cream
1 package O’Sole Mio Four Cheese Tortellini
1 bunch kale, stemmed, washed and chopped
½ cup parmesan cheese – optional
Crushed chili flakes
Directions
- Heat a large pot over medium-high heat. Add the oil, Brandt Smoked Farmer Sausage, onions, and garlic and cook until the sausage is browned and the onion is translucent, about 5 minutes.
- Add the chicken stock, diced tomatoes, and tomato paste until fully incorporated. Bring to a boil, then reduce heat to a simmer and cook until slightly reduced, about 15 minutes. Stir in O’Sole Mio tortellini and kale, simmer for 3-5 minutes until pasta is tender. Remove from heat and stir in cream.
- Ladle the soup into bowls. Sprinkle with parmesan and red pepper flakes, if desired, season with salt and pepper to taste.
