Arrange chips in a thin layer on an oven tray, generously sprinkle with shredded cheese.
In a medium pan over medium heat, heat olive oil and add onions. Sauté, moving frequently, for 10–12 minutes. Add balsamic and continue to sauté for 10 minutes until soft and beginning to caramelize.
Bake cheesy chips in the oven for about 5 minutes until cheese is fully melted and bubbling.
Remove from oven and top with onions, Westfalian Ham, Divina Fig Jam, chives and whipped brie. Serve immediately.
