Frittata

Ingredients

  • 6 eggs
  • 1/4 cup cream
  • 1 sprig thyme
  • 1/2 cup Jarlsberg cheese, shredded
  • 1/2 cup arugula
  • 100 grams Brandt Turkey Kolbassa, cut in half
  • 1 tbsp olive oil
  • Cherry tomatoes to garnish
  • Salt and black pepper

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together eggs, cream, salt, pepper, and thyme. Add cheese and arugula, stirring to combine.
  3. Line a 9″ fluted pie pan with parchment paper and pour in the egg mixture.
  4. Add sliced Brandt Turkey Kolbassa on top of egg mixture. Top with a light drizzle of olive oil. Bake for 25–40 minutes, or until centre is fully cooked.
  5. Remove from oven and cut and serve while warm.
