Ingredients:
4 slices Brandt Double Smoked Bacon, diced
2 green onions sliced, with green and white parts separated
1 tablespoon olive oil
4 large eggs
1/2 cup cheddar cheese, shredded
1/2 avocado, sliced
2 tablespoons cilantro, chopped
1 jalapeno, sliced (optional)
3 corn tortillas
salsa
salt and pepper
Direction
Fry Brandt Double Smoked Bacon in a medium high pan until crisp, remove and set aside. Whisk the eggs and whites of green onions together in a bowl, then pour in pan. Stir until soft, fluffy and cooked through, season with salt and pepper. Assemble the breakfast tacos by adding a portion of eggs to tortilla. Top with the diced Brandt Double Smoked Bacon, a sprinkle of cheese, avocado slices, cilantro, a few jalapeno slices and tops of green onions. Serve with your favourite salsa.
