Roasted Red Pepper Pasta

Ingredients

  • 100g Brandt Prager Ham
  • 12 oz. ridged rigatoni
  • 2 tbsp olive oil
  • 4 large garlic cloves, minced
  • 1 jar S&F Roasted Red Peppers, drained
  • ½ cup whole milk or milk of your choice
  • ½ tsp dried oregano
  • ½ tsp Spanish paprika, sweet or smoked
  • ½ tsp each salt & pepper
  • ¼ cup grated parmesan
  • Handful fresh basil leaves, torn, for garnish (optional)

Directions

  1. Preheat oven or air fryer to 375°F. Crisp ham in oven for 7-10 minutes, or air fryer for 3-5 minutes.
  2. Cook pasta according to package directions, about 10 minutes. Reserve 1 cup of the pasta cooking water before draining.
  3. While the pasta is cooking, heat oil over medium heat until just shimmering. Add the garlic and stir until fragrant, about 30 seconds. Transfer the garlic and olive oil to the bowl of a large food processor, add the roasted peppers, milk, oregano, paprika, and salt and pepper and blend until smooth.
  4. Combine the pasta and sauce. Drain the pasta, return pasta to pot, pour the blended sauce over top. Turn the heat on low and add the parmesan. Stir to mix well until the sauce is heated through. Add in the reserved pasta water, a splash at a time, as necessary until the sauce is a desired consistency.5. Top with Brandt Prager Ham crisps, parmesan and basil for garnish.
