Smoked Side Bacon and Egg Salad Sandwich


2 slices of Rudolph’s Bavarian Premium Sandwich Bread, toasted
2 slices Brandt Smoked Side Bacon, cooked until crisp
2 hard boiled eggs, peeled and cooled
1 tbsp. mayonnaise more for spreading on bread if desired
1 tsp. Dijon Mustard
1 healthy pinch of smoked paprika
Small handful of leaf lettuce


Mash and mix eggs with mayonnaise and mustard, season with salt and pepper.
- Bacon can be chopped and added to egg mixture or place the strips on sandwich.
- Heap the egg salad and greens on toasted Rudolph’s Bavarian Premium Sandwich Bread.
- Put the sides together and cut in half.
